    Asian Beef Salad

    Inspired by Thai cuisine, this beef salad is fresh, zesty and absolutely delicious.

    Ingredients for 4 servings

    • 500g / 1lb of steak beef.
    • 30g/ 1/4 cup of sliced shallots or red onion as desired.
    • 15g/ 1/4 cup of chopped cilantro.
    • 15g/ 1/4 cup of fresh and chopped mint leaves.
    • 15g/ 1/4 cup of sliced spring onion.
    • 1 sliced cherry tomato.
    • 15g/ 1/8 cup of sunflower seeds.
    • 15g/ 0.5oz. of pork rinds.
    • 2 tablespoons of red chili flakes.
    • 1 tablespoon of soya sauce.
    • 1.5 tablespoon of fish sauce.
    • 2 limes juiced.
    • 1 teaspoon of low carb sweetener of choice.
    • 1 teaspoon of black pepper to taste.
    • 1 tablespoon of chicken fat or any cooking fat of your choice.

    Instructions

    1 Using a small mixing bowl, add in the soya sauce, 1 tablespoon of fish sauce, and black pepper to taste then mix together to combine. This makes the marinade. Place the beef in the bowl containing the marinade then mix to coat. Cover the bowl and let the beef marinate for about thirty minutes,
    2 In the meantime, chop or slice your vegetables then set aside. place a skillet pan over medium heat, add in the sunflower seeds and toast for a few minutes until it becomes brown in colour. Do the same for the pork rinds then place both the seeds and pork rinds in a mortar and grind to fine powder, set aside.
    3 Preheat the grill to medium-high heat, grease the grates then add in the marinated beef. Grill the beef for a few minutes until it is cooked through then place on a plate. Use a sharp knife to cut the steak into smaller pieces, then add to a large salad bowl.
    4 Next, add in the shallots, tomato, spring onions, chili flakes, lime juice, the rest of the fish sauce, sweetener, mint leaves, coriander, crushed pork rinds, and sunflower seeds then mix properly to combine. Serve.
