Ingredients for 11 slices

Bread

  • 4 large eggs.
  • 3 tablespoons of melted unsalted butter.
  • 3 tablespoons of heavy whipping cream.
  • 1 teaspoon of vanilla extract.
  • 2 cups (192g) of almond flour.
  • 2 tablespoons of coconut flour.
  • 1 1/2 teaspoon of baking powder.
  • 1/2 cup (103g) of erythritol.
  • 1 cup (100g) of blueberries.

Lemon Glaze

  • 1 tablespoon of lemon juice.
  • 1 tablespoon of heavy cream.
  • 4 tablespoons of powdered erythritol.

Instructions

1 Using a large mixing bowl, add in the wet ingredients for the bread then mix properly to combine. Using another mixing bowl, add in the dry ingredients then mix to combine. Pour the dry ingredients into the bowl containing the wet ingredients then mix properly to combine until a dough form.
2 Next, flour a kitchen working surface, place the dough on top, use your hands to knead for a few minutes, fold in the blueberries, shape into a loaf then place in a greased baking pan. Cover the pan then let the dough rise for about forty-five minutes.
3 Bake the bread in a preheated oven of 177 degrees C (350 degrees F) for about forty-five minutes to fifty minutes until it becomes golden brown on top. Once baked, let the bread loaf cool on a rack for about ten minutes while you make the glaze.
4 Using a small mixing bowl, add in all the ingredients for the glaze then whisk properly to combine until the mixture becomes smooth. Pour the prepared glaze over the bread, slice and serve.
