Ingredients for 2 servings

  • 2 medium (300 g/ 10.6 oz) avocados.
  • 1 1/2 cup (210 g/ 7.4 oz) of cooked chicken.
  • ¼ cup/ 58g of mayonnaise.
  • 2 tablespoons (24 g/ 0.8 oz) of sour cream.
  • 1 teaspoon of dried thyme.
  • 1 teaspoon of paprika.
  • 1/2 teaspoon of onion powder.
  • 1/2 teaspoon of garlic powder.
  • 1/4 teaspoon of cayenne pepper.
  • 2 tablespoons of fresh lemon juice.
  • 1/4 teaspoon of salt to taste.

Instructions

1 Use a sharp knife to cut the chicken into smaller pieces. You can also shred with a fork. Using a large mixing bowl, add in the rest of the ingredients on the list then mix properly to combine. Wash and cut the avocado lengthwise, remove the seed and scoop out the flesh.
2 Add the avocado flesh and chicken into the bowl containing the rest of the ingredients then mix to combine. Fill the avocado with the chicken mixture then serve.
