Chicken with Asparagus

You have your proteins, your vitamins, your fat, and most importantly, little carbs.

Ingredients for 4 servings

  • 3 tablespoons of olive oil.
  • Juice of 1 lemon.
  • 3 minced cloves of garlic.
  • 2 teaspoons of dried oregano.
  • 1 pound/500g of chicken thighs.
  • Salt and pepper to taste.
  • 1/2 pound/453.59g of sliced asparagus.
  • 1 lemon sliced.

Instructions

1 Preheat the oven to 190 degrees celsius, using a large mixing bowl, add in the lemon juice, garlic, oregano, salt, and pepper to taste then mix to combine. Add the chicken into the bowl containing the mixed ingredients then toss to coat, set aside.
2 Place an ovenproof skillet over medium-high heat then add in the oil. Once the oil is hot, add in the seasoned chicken and cook for about four minutes on both sides until it becomes brown in colour.
3 Next, take the skillet pan out of the heat, add in the asparagus then place the skillet pan into the preheated oven. Bake the chicken and asparagus for about thirty minutes until the chicken is cooked. Serve.
