    Delicious Chicken Cacciatore

    This hearty warm dish is great for family reunions, especially on cold days. Warm up, guilt-free!

    Ingredients for 4 servings

    • 6 boneless skinless chicken thighs or breasts.
    • Salt and black pepper to taste.
    • 3 tablespoons of olive oil.
    • 4 minced cloves of garlic.
    • 1/2 medium and chopped white onion.
    • 1/4 cup / 45g of diced red bell peppers.
    • 1 cup / 150g of sliced carrots.
    • 1 cup / 75g of sliced mushrooms.
    • 1 (28 oz. / 225g) canned and diced tomatoes.
    • 60z. / 200g of tomato paste.
    • 1 teaspoon of dried basil.
    • 1/2 teaspoon of dried oregano.
    • 1/4 teaspoon of dried rosemary.
    • 1/4 teaspoon of dried thyme.
    • 4 Kalamata olives.
    • 1/2 cup / 115g of chopped kale with the stems removed.
    • 1 tablespoon of xanthan gum.
    • 2 tablespoons of fresh and chopped parsley.
    • Fresh basil leaves for garnish which is optional.

    Instructions

    1 Add oil to the instant pot then let heat by pressing the sauté button. In the meantime, season the chicken with salt and pepper to taste then add to the hot oil. Sear the chicken for a few minutes until you get a nice brown caramel coating, set aside in a plate.
    2 Add more oil to the inner pot of the instant pot and let heat. Once the oil is hot, add in the garlic and the rest of the ingredients on the list aside from the basil, kale, and olives, stir to combine then sauté for a few minutes.
    3 Next, add the chicken back into the instant pot, press the cancel button, cover the pot’s lid, set the valve to sealing then cook on a high setting for about ten minutes. Once the time elapses, carry out a quick pressure release. Add in the olives and kale, stir properly to combine, add in the xanthan gum and cook for an additional two to three minutes until the sauce thickens.
    4 Serve with chopped parsley as garnish. Enjoy.
