    Delicious Chicken Fajitas

    This Mexican favourite is a natural place to start when in keto.

    Ingredients for 6 servings

    Marinated Chicken

    • 600 g (1.3 lb.) of skinless and boneless chicken breasts.
    • 2 minced cloves of garlic.
    • 1 teaspoon of each dried oregano, ground cumin, and paprika.
    • 1/2 teaspoon of chipotle chili powder.
    • 1 teaspoon of salt to taste.
    • 1/4 cup/60ml of extra olive oil.
    • 2 tablespoons of lime or lemon juice as desired.
    • 2 tablespoons of ghee.

    Stir Fried Vegetables

    • 1 medium and sliced white or brown onion.
    • 1 large green and sliced pepper.
    • 1 medium and sliced red pepper.
    • 1 medium and sliced orange or yellow pepper.
    • 2 tablespoons of ghee.

    1 Using a large mixing bowl, add in the chicken and the rest of the ingredients for the marinade then mix properly to combine until the chicken is coated all through. Cover the chicken and its marinade with a cling film then place in the refrigerator to marinate for about thirty to sixty minutes preferably, overnight.
    2 Place a non-stick skillet pan over medium-high heat then add in about two tablespoons of ghee. Once the ghee melts, add in the sliced onions and peppers then cook for about five to eight minutes until they become crisp-tender. Make sure you stir as you cook then set aside in a clean plate.
    3 Still using the same pan over medium-high heat, add in the rest of the ghee and let melt. Once the ghee melts, add in the marinated chicken slices and cook for about four to six minutes until they become brown in colour. Make sure you flip halfway through the cooking.
    4 Next, add in the cooked peppers and onions then cook everything for about one minute. Serve.
