Ingredients FOR 10 SERVINGS

  • 6 eggs.
  • 8 ounces of half and half.
  • 2 tablespoons of softened butter.
  • 1/4 cup/30g of coconut flour.
  • 1/3 cup/40g of unsweetened cocoa powder.
  • 1/4 cup/24g of chocolate protein powder.
  • 1 teaspoon of baking powder.
  • 1/4 teaspoon of salt to taste.
  • 1 teaspoon of vanilla extract.
  • 1 teaspoon of coffee extract.
  • 2 teaspoon of chocolate liquid stevia.

Optional toppings

  • Sugar-free whipped cream
  • Maple syrup
  • Almonds
  • Fresh raspberries, blackberries, and blueberries
  • Melted sugar-free chocolate

Instructions

1 Using a food processor or a high-speed blender, add in the eggs, half and half, butter, coconut flour, cocoa powder, protein powder, baking powder, salt, vanilla extract, coffee extract, and sweetener then blend until the mixture becomes smooth.
2 Let the waffle batter sit for a few minutes, preheat the waffle iron then spray with cooking oil. Working in batches, pour a few spoons full of the batter into the waffle iron then cook according to the directions of the manufacturer. Serve with your favorite topping then enjoy your waffle.
