Using a microwave-safe bowl, add in the mozzarella cheese and cream then microwave for about one minute until both melts and combine. Using a large mixing bowl, add in the melted cream mixture alongside the rest of the ingredients for the dough then mix properly to combine.
Next, flour a kitchen working surface then place the dough on the surface. Knead the dough for a few more minutes with your hands then let it rest for about fifteen minutes.
Next, roll out the dough with a rolling pin then shape it into a large rectangle. Spread the butter over the dough, add some sprinkles of cinnamon and the sweetener then use a sharp knife to cut the dough into fifteen pieces. Roll each piece of dough as desired, place them in a greased baking pan, cover the baking pan and let the dough rise for about forty-five minutes.
Next, bake the cinnamon rolls in a preheated oven of 177 degrees C (350 degrees F) for about twenty to twenty-five minutes until they become golden brown in colour. Once baked, let the rolls cool for about ten minutes while you make the frosting.
Using a small mixing bowl, add in all the ingredients for the frosting then whisk properly to combine until the mixture becomes smooth. Frost the cinnamon rolls as desired then serve.
