Ingredients For 6 bagels

  • 1 1/2 cup (175g) of shredded mozzarella.
  • 1 cup (100g) of almond flour.
  • 1 large and beaten egg.
  • 4 tablespoons (50g) of cream cheese.
  • 1 tablespoon of psyllium husk powder.
  • 1 teaspoon of baking powder.
  • Sesame seeds (optional).

1 Preheat the oven to 180 degrees celsius using a microwave-safe bowl, add in the mozzarella and cream cheese then microwave on high for about one and a half minutes until it melts completely. Set aside in a bowl. Using a separate large mixing bowl, add in the dry ingredients on the list then mix properly to combine. Pour the dry ingredients and the beaten egg into the bowl containing the cheese mixture then mix properly to combine.
2 Next, knead the dough with clean hands until it becomes smooth. You can also do this using a food processor or a stand mixer. Cut the dough into six parts then make a log with each segment. With the logs, form bagel shapes and set aside.
3 Place parchment paper on a baking sheet, add in the bagels then add some sprinkles of sesame seeds over each bagel. Place the baking sheet into the preheated oven and bake for about twenty minutes until the top becomes light brown in colour. Serve.
