Delicious Lemon Chicken

Creamy and zesty, this delicious chicken dish will make you glad you started keto.

Ingredients for 2 servings

  • 4 skin-on and boneless chicken thighs or breasts.
  • 1 cup / 240ml of chicken stock.
  • Juice of 1/2 lemon.
  • 1.5 teaspoons of capers.
  • 2 tablespoons of grass-fed butter.
  • 2 teaspoons of chopped fresh parsley.
  • Kosher salt and fresh pepper to taste.

Instructions

1 Place a non-stick skillet pan over medium heat then add in about 1 tablespoon of oil. Once the oil is hot, season the chicken with salt and pepper to taste then add to the hot oil. Cook the seasoned chicken for about seven to eight minutes until it becomes golden brown in colour. Flip the chicken over and cook for an additional three to four minutes until it is cooked through, set aside in a foil to keep warm.
2 Next, pour out the fat from the skillet pan, place the pan over medium heat, add in the chicken stock, lemon juice, and capers then bring to a simmer. Cook the stock for about ten minutes until it reduces by half. Next, add in the butter and parsley, decrease the heat to low then cook for an additional one to two minutes until the sauce thickens, set aside.
3 Serve the chicken with the sauce then garnish with parsley if desired. Enjoy.
