Delicious Salmon and Asparagus

Ingredients for 4 servings

  • 4 salmon fillets.
  • 1 pound (500 g) of trimmed asparagus spears.
  • 1/3 cup of melted butter.
  • 1/3 cup (1/2 lemon) of lemon juice.
  • 1 tablespoon of minced garlic.
  • 2 teaspoons of fresh and chopped parsley.
  • Salt and pepper to taste.
  • 2/3 cup of freshly grated parmesan cheese.
  • Lemon wedges to serve.
  • Dill to taste.

Instructions

1 Preheat the oven to 200 degrees Celsius, place an aluminium foil on a baking sheet then set aside. Place the salmon into the lined baking sheet, arrange the asparagus around the salmon then set aside. Using a small mixing bowl, add in all the ingredients on the list aside from the cheese, dill and lemon wedges, then mix properly to combine.
2 Pour the mixture over the salmon and asparagus then top with the grated cheese. Use your hands to properly tent the foil, sealing all edges then place the baking sheet into the preheated oven. Bake the salmon and asparagus for about fifteen minutes until both are cooked through.
3 If you want it to be crispy, broil for an additional one to two minutes until the cheese becomes golden in colour. Serve with dill and the lemon wedges.
