Delicious Salmon Salad

Fresh, light and tasty.

Ingredients for 2 servings

Salad

  • 1 (6-ounces/168g) salmon fillet.
  • Salt and black pepper to taste.
  • 1/2 teaspoon of garlic powder.
  • 1 tablespoon of fresh lemon juice.
  • 1 tablespoon of olive oil.
  • 2 peeled, pitted, and chopped avocados.
  • 4 cups/400g of mixed and chopped green lettuce.
  • 2 hard-boiled eggs, peeled and sliced.
  • 5 slices of cooked and chopped bacon.
  • 1 cup/225g of sliced grape or cherry tomatoes.
  • 1 cup/180g of olives.
  • 1/2 sliced cucumber.
  • 1/2 cup/ 62g of crumbled feta or blue cheese as desired.

Vinaigrette

  • 4 tablespoons of apple cider vinegar.
  • 2 tablespoons of sour cream.
  • 1/2 teaspoon of garlic powder.
  • 3 tablespoons of extra virgin olive oil or avocado oil as desired.
  • Salt and pepper to taste.

Instructions

1 Use a paper towel to dry the salmon then rub each side with olive oil and lemon juice. Season the salmon with garlic powder, salt, and pepper to taste then set aside. Preheat the grill to medium-high heat, place the salmon the grill and cook for about four to five minutes on both sides.
2 Next, heat a broiler then place a parchment paper on a baking sheet and set aside. Place the cooked salmon in the baking sheet then place the sheet into the broiler. Broil the salmon for about ten minutes until it flakes with a fork.
3 Next, using a mixing bowl, add in all the ingredients for the vinaigrette then mix to combine. Drizzle the avocado with 1 teaspoon of the whisked vinaigrette then toss to combine. In a salad bowl, combine the cooked salmon, sliced egg, avocado, bacon, sliced tomato, olives, sliced cucumber, and cheese. Serve with some drizzles of the dressing then enjoy.
