    Delicious Salmon with Spinach and Mushrooms

    Three delicious ingredients come together in a dish that is light and exquisite.

    Ingredients for 4 servings

    • 450g/1lb. of salmon fillets.
    • 1 cup/75g of medium and sliced mushrooms.
    • 2 cups/450g of chopped fresh spinach leaves.
    • 1 cup/225g of chopped tomato.
    • 1/2 teaspoon of garlic powder.
    • 3 tablespoons of extra-virgin olive oil.
    • 1 tablespoon of lemon juice.
    • Grated parmesan cheese.
    • Salt and black pepper to taste.

    Instructions

    1 Preheat the oven to 190 degrees Celsius, use clean water to wash the salmon then dry with a paper towel. Grease a baking sheet with cooking spray then add in the salmon. Using a small mixing bowl, add in the mushrooms, spinach, tomato, garlic powder, oil, lemon juice, salt, and pepper to taste then mix properly to combine.
    2 Pour the mixture over the salmon in the baking sheet then place the baking sheet into the preheated oven. Bake the salmon for about twenty to twenty-five minutes until the fish is cooked through and flakes with a fork. Add the cheese on top then serve.
