    Delicious Strawberry Muffins

    These delicious muffins go great with coffee or tea.

    Ingredients for 12 muffins

    • 3 large eggs.
    • 1/2 cup (200g) of erythritol or xylitol as desired.
    • 1/3 cup (80g) of unsweetened vanilla almond milk.
    • 1/3 cup (69.67g) of melted coconut oil.
    • 2 1/2 cup (225g) of almond flour.
    • 2 teaspoon of baking powder.
    • 1 cup (170g) of diced strawberry.

    1 Preheat the oven to 177 degrees C (350 degrees F), place a parchment paper on a twelve-well muffin pan then grease with cooking spray and set aside. Using a large mixing bowl, add baking powder and almond flour then mix properly to combine. In another mixing bowl, add in the rest of the ingredients on the list aside from the strawberries then mix until the mixture becomes smooth.
    2 Pour the flour mixture into the bowl containing the egg mixture, then mix properly to combine until the mixture becomes smooth without lumps. Fold in the strawberries, pour the batter into each well of the prepared muffin pan then place the pan into the preheated oven.
    3 Bake the muffins for about twenty-two to twenty-five minutes until it is cooked through and an inserted toothpick comes out clean. Once baked, let the muffins cool for about ten minutes then serve.
