    Egg-filled Avocado Delis

    Ingredients for 4 servings

    • 2 halved and pit removed avocados.
    • 4 medium eggs.
    • Salt and pepper to taste.

    Optional Toppings

    • 2 strips of cooked bacon.
    • 1/2 chopped red bell pepper.
    • 1/4 cup (55g) of chopped spinach.
    • Chopped fresh herbs.

    Instructions

    1 Preheat the oven to 204 degrees C (400 degrees F), place a parchment paper on a baking sheet then set aside. Use a sharp kitchen knife to cut the avocado in two halves, remove the pit then scoop out a little portion of the flesh, then set the avocado into the lined baking sheet.
    2 Crack the eggs into the centre of the avocado then place the baking sheet into the preheated oven. Bake the avocado for about thirteen to eighteen minutes until the egg is cooked through. Add your favourite topping then serve.
