Using a food processor or a high-speed blender, add in the cauliflower and blend until they start looking like rice, set aside. Place a skillet pan over medium heat, add in the butter and let melt. Once the butter melts and becomes hot, add in the peppers, ginger, scallions, and garlic then cook for about three minutes.
Next, add in the cauliflower and cook for an additional three minutes. Stir as you cook. Add in the aminos and salt to taste, stir to combine then use a spatula to push the rice to one side of the pan. Add in the eggs, salt, and pepper to taste, cook for a few minutes and scramble.
Next, stir the egg and cauliflower rice together, add in the sesame oil, stir again then take the skillet pan out of the heat. Serve the rice with some sprinkles of onions and enjoy.
