    Ingredients For 6 muffins

    • 1 cup (2 oz./96g) of blanched almond flour.
    • 1/3 cup (3 oz./76g) of sour cream.
    • 1/2 cup (2 oz./65g) of finely chopped walnuts.
    • 1/3 cup (2 oz./70g) of powdered erythritol sweetener.
    • 1 large egg.
    • 1 1/2 tablespoons of vegetable oil.
    • 2 teaspoon of banana extract.
    • 1/4 teaspoon of baking soda.
    • 1/4 teaspoon of salt to taste.

    Instructions

    1 Preheat the oven to 180 degrees celsius, using a large mixing bowl, add in all the dry ingredients on the list as from the walnuts then mix properly to combine. Using another mixing bowl, add in all the wet ingredients on the list then mix properly to combine. Pour the wet ingredients into the bowl containing the dry ingredients then mix everything properly to combine.
    2 Next, fold in the chopped walnuts, pour the mixture into a six-well muffin pan then place the pan into the preheated oven. Bake the muffins for twenty minutes until they are fully baked and an inserted toothpick comes out clean, serve.
