This delicious beef stew will have the kids begging for more and the in-laws calling more often. Use it carefully.

Ingredients for 4 servings

  • 1 lb./500g of beef short rib or beef steak as desired.
  • 2 cups/450ml of beef broth.
  • 4 minced garlic cloves.
  • 110g / 3/4 cup of sliced onion.
  • 100g / 3/4 cup of carrot.
  • 100g / 3/4 cup of radishes.
  • 1/2 teaspoon of salt to taste.
  • 1/4 teaspoon of pepper to taste.
  • 1/2 teaspoon of xanthan gum.
  • 1 tablespoon of butter.
  • 1 tablespoon of coconut oil.

Instructions

1 Use a sharp kitchen knife to chop the beef into smaller pieces, season with salt and pepper to taste, then set aside. Place a saucepan over medium heat then add in the oil. Once the oil is hot, add in the seasoned beef and cook for a few minutes until all sides become brown in colour, set aside on a plate.
2 Still using the same skillet pan over medium heat, add in the butter and let melt. Once the butter melts, add in the onions and garlic then cook for a few minutes until the onions become tender. Next, add in the broth, stir properly to combine then add in the xanthan gum.
3 Give the stew another stir and cook for about thirty minutes. Make sure you stir as you cook. Add in the carrots and radishes then cook for about thirty minutes until the broth thickens. Serve.
