    Keto Blueberry Scones

    Fluffy, all-pleasing, low-carb, mouth-watering blueberry scones. No need to abandon your afternoon tea on a keto diet.

    Ingredients For 6 scones

    • 4 ounces (1 cup/96g) of blanched almond flour.
    • 2 1/2 ounces (1/3 cup/76g) of heavy cream.
    • 2 tablespoons of swerve sweetener.
    • 1 ounce (1/4 cup/25g) of fresh blueberries.
    • 2 tablespoons of coconut flour.
    • 1/2 teaspoon of baking powder.
    • 1/4 teaspoon of salt to taste.

    Instructions

    1 Preheat the oven to 180 degrees celsius, place an oven rack at the centre, then place parchment paper on a baking sheet and set aside. Using a small mixing bowl, add in all the dry ingredients on the list then mix properly to combine. Add in the heavy cream, stir to combine then fold in the blueberries.
    2 Equally, divide the dough into 6 portions, form the dough into triangular shapes or your favourite shape then place them in the lined baking sheet. Place the baking sheet into the preheated oven and bake the scones for about fifteen to twenty minutes until cooked through. Serve.
