    Ingredients for 6 servings

    • 2 pounds (907g) of boneless and skinless chicken breast.
    • 5 sliced cloves of garlic.
    • 2 sliced medium onions.
    • 1 teaspoon of dried oregano.
    • 1 tablespoon of chopped cilantro.
    • 1/2 cup (165g) of citrus juice.
    • 1/2 teaspoon of black pepper to taste.
    • 1 teaspoon of Kosher salt to taste.
    • 3 tablespoons of butter or ghee.
    • 1/3 cup (78ml) of water.
    • Chopped cilantro for garnish.

    1 Use a paper towel to pat dry the chicken then place a large mixing bowl. In another mixing bowl, add in the oregano, half the sliced onions, cilantro, citrus juice, 3 sliced garlic cloves, salt, and pepper to taste then mix properly to combine. Pour the mixture into the bowl containing the chicken, toss properly to coat then marinate in the refrigerator for about two hours.
    2 Next, place a non-stick skillet pan over medium heat then add in the butter. Once the butter melts, add in the chicken and cook for about five minutes until it becomes brown in colour. Flip over and cook the chicken for an additional five minutes until the other side becomes brown.
    3 Decrease the heat to medium-low, add in the rest of the onions and garlic, stir to combine then cook for about five minutes. Add in the water, cover the skillet then cook for about ten minutes until the chicken is cooked through. Serve with the chopped cilantro if desired, enjoy.
