A lush delicacy, now available in Keto!

Ingredients for 4 servings

Dish

  • 1 1/2 pounds (700g) of sliced boneless and skinless chicken breasts.
  • 1 teaspoon of salt to taste.
  • 3/4 teaspoon of black cracked pepper to taste.
  • 1 1/2 teaspoons of paprika.
  • 1 1/2 teaspoons of onion powder.
  • 3 tablespoons of sun-dried tomato oil or olive oil as desired.

Sauce

  • 2 tablespoons of minced garlic.
  • 5 oz. (150g) of sun-dried tomato strips in oil, drained.
  • 1 teaspoon of Dijon mustard.
  • 1 1/2 cups of heavy cream.
  • 3 cups of chopped spinach or any leafy green of choice.
  • 1/2 cup of fresh grated Parmesan cheese.

Instructions

1 Using a small mixing bowl, add in the salt, pepper, paprika, and onion powder then mix properly to combine. Season the chicken with the mixed ingredients then set aside. Place a non-stick skillet pan over medium heat then add in half of the tomato oil. Once the oil is hot, add in the seasoned chicken and sear for about six to eight minutes on both sides until it becomes properly cooked and turns golden in colour. Set aside.
2 Still using the same skillet pan over medium heat, add in the rest if the tomato oil then let heat. Once the oil is hot, add in the garlic and fry for about one minute until it becomes fragrant. Add in the sun-dried tomatoes and fry for an additional one to two minutes.
3 Next, add in the Dijon mustard, decrease the heat to medium-low, add in the cream, salt, and pepper to taste then bring the sauce to a simmer. Add in the spinach then cook for a few minutes until the vegetable wilts. Add in the cheese and cook until it melts, add the chicken back into the skillet pan alongside with parsley then serve.
