    Lemon Garlic Salmon

    This delicious dish hits all the right spots. Its tasty, healthy and fatty!

    Ingredients for 4 servings

    • 1/4 cup / 57g of ghee or butter as desired.
    • 8 minced garlic cloves.
    • 1/4 cup / 60ml of chicken broth.
    • 1/4 cup / 57ml of fresh lemon juice.
    • Sea salt to taste.
    • 1 tablespoon of avocado oil.
    • 4 (6 ounces each) salmon fillets.
    • Fresh cracked black pepper to taste.
    • 2 tablespoons of minced fresh parsley.
    • Fresh and sliced lemons for garnish.

    Instructions

    1 Place a saucepan over medium heat then add in the ghee. Once the ghee melts, add in the garlic and sauté for about one to two minutes until it becomes fragrant. Add in the broth, lemon juice, and salt to taste then simmer for a few minutes until the liquid reduces by half and becomes thick, set aside. This makes the lemon garlic sauce.
    2 Season the salmon with salt and crakes pepper to taste then set aside. Place a non-stick skillet pan over medium heat then add in the avocado oil. Once the oil is hot, add in the seasoned salmon and cook for two to three minutes until it becomes crispy and brown in colour.
    3 Flip the salmon over and cook for an additional three to four minutes until it is cooked through and flakes with a fork. Pour the garlic lemon sauce over the salmon, stir combine then take out of the heat. garnish with chopped parsley and lemon slices then serve.
