The crispiness of the oven-baked salmon meets the tropical flavours of the avocado. Low carb and delicious!

Ingredients for 4 servings

Main Dish

  • 4 salmon fillets.
  • 1 teaspoon of ground cumin.
  • 1 teaspoon of paprika.
  • 1 teaspoon of onion powder.
  • 2 teaspoons of chili powder.
  • 2 tablespoons of lemon juice.
  • 2 tablespoons of olive oil.
  • Fresh and minced cilantro.
  • Sea salt to taste.
  • Ground black pepper to taste.

Avocado Salsa

  • 1 peeled and diced avocado.
  • 1/2 chopped cucumber.
  • 1/2 minced red onion.
  • 1/2 diced bell pepper.
  • 1 tablespoon of fresh lime or lemon juice as desired.
  • 1/4 cup/260g of olive oil.
  • 1/2 teaspoon of ground cumin.
  • Sea salt to taste.
  • Ground black pepper to taste.

Instructions

1 Preheat the oven to 200 degrees Celsius. Using a large mixing bowl, add in the cumin, paprika, onion powder, chili powder, salt, and pepper to taste then mix properly to combine, set aside. In another mixing bowl, add in the oil and lemon juice then mix to combine. Coat the salmon with the juice mixture then place in a baking dish.
2 Place the baking dish into the preheated oven and bake the salmon for about twelve to fifteen minutes until it is cooked through. In the meantime, using a mixing bowl, add in the diced avocado, diced cucumber, onions, bell pepper, lemon juice, oil, cumin, salt, and pepper to taste then toss to combine. This makes the salsa.
3 Serve the salmon with the salsa then garnish with chopped cilantro, enjoy.
