- 3 large eggs.
- 1 tablespoon of butter.
- 1/3 cup (50g) of sliced cherry tomatoes.
- 2 slices (30g) of fresh mozzarella.
- 4 chopped basil leaves.
- 1 heaped tablespoon of grated parmesan.
- 1 tablespoon of pesto.
- Salt and pepper to taste.
- 1 teaspoon of balsamic vinegar and 1 tablespoon of extra virgin olive oil which is optional.
