    Ingredients for 2 servings

    • 3 large eggs.
    • 1 tablespoon of butter.
    • 1/3 cup (50g) of sliced cherry tomatoes.
    • 2 slices (30g) of fresh mozzarella.
    • 4 chopped basil leaves.
    • 1 heaped tablespoon of grated parmesan.
    • 1 tablespoon of pesto.
    • Salt and pepper to taste.
    • 1 teaspoon of balsamic vinegar and 1 tablespoon of extra virgin olive oil which is optional.

    Instructions

    1 Using a small mixing bowl, add in the egg and water then whisk properly to combine. Place a non-stick skillet pan over medium-low heat then add in the butter. Once the butter melts, add in the egg mixture then cook for a few minutes until it is cooked.
    2 Next, to one side of the egg, add in the sliced tomatoes, basil, parmesan, and mozzarella then fold the egg over the filling. Serve with pesto and some drizzles of balsamic vinegar and olive oil, enjoy.
