    Low Carb Chicken and Broccoli Casserole

    This simple dish looks amazing, smells amazing and tastes amazing. It is a three-in-one wonder for the keto public.

    Ingredients for 6 servings

    • 1/4 cup / 57g of butter, divided.
    • 12 ounces / 342g of chopped broccoli.
    • 2 minced cloves garlic.
    • 1 cup / 230g of heavy whipping cream.
    • 1.5 cups / 135g of shredded mozzarella, divided.
    • 1/2 cup / 45g of grated parmesan cheese.
    • Salt and pepper to taste.
    • 3 cups (1 1/4 lbs. / 375g) of cooked and chopped chicken.

    Instructions

    1 Place an ovenproof skillet pan over medium heat, then add in about two tablespoons of butter. Once the butter melts, add in the broccoli and sauté for about four minutes until it becomes tender and bright green in colour, set aside in a bowl.
    2 Still using the same skillet pan over medium heat, add in the rest of the butter then melt. Once the butter melts, add in the garlic and cook for about one minute until it becomes fragrant. Add in the cream then simmer for about three to five minutes until it reduces by half.
    3 Next, add in about a half cup of the mozzarella and the parmesan, stir properly to combine then cook for a few minutes until the cheeses melt. Add some sprinkles of salt and pepper to taste, add in the cooked broccoli, chopped chicken, and the rest of the cheese then set aside.
    4 Preheat the broiler, add in the skillet pan then broil the casserole for about two to five minutes the cheese becomes brown in colour. Serve.
