Low Carb Chicken and Cabbage Stir Fry

A healthy, low carb and easy dish, perfect for a light lunch or dinner.

Ingredients for 2 servings

  • 1 tablespoon of coconut oil.
  • 400g / 0.8 lb. of sliced chicken breast or thighs.
  • 1/2 teaspoon of sea salt to taste.
  • 1/4 teaspoon of white or black pepper to taste.
  • 1 teaspoon of grated ginger.
  • 3 cups (1/2 medium) of cabbage.
  • 1 large and sliced carrot.
  • 2 diced cloves of garlic.
  • 1 teaspoon of fish sauce.
  • 3 1/2 tablespoons of coconut aminos.
  • Juice of 1/2 lime.
  • 1 teaspoon of sesame oil.

Instructions

1 Place a frying pan over medium heat then add in 1 teaspoon of coconut oil. Once the oil is hot, add in the chicken with sprinkles of salt and pepper to taste then cook for about three minutes. Flip over and cook the chicken for an additional three minutes the set aside in a plate.
2 Still using the same frying pan over medium heat, add in a teaspoon of oil and heat. Once the oil is hot, add in the ginger, cabbage, and carrot then cook for about two minutes. Don’t forget to stir as you cook.
3 Next, add in a splash of water alongside the rest of the ingredients on the list (without the sesame oil), stir properly to combine then cook for about two minutes. Don’t forget to stir. Add some drizzles of sesame oil then serve.
