    Low Carb Chicken Nuggets

    Ingredients for 8 servings

    • 250g (8.82 oz.) of skinless boneless chicken breast.
    • 1 teaspoon of old bay seasoning.
    • Salt and pepper to taste.
    • 1 egg.
    • Psyllium husk.
    • Avocado oil for frying.

    1 Using a food processor or a high-speed blender, add in the chicken breasts, old bay seasoning, salt, and pepper to taste then blend until the mixture is minced. Wash your hands with clean water, make small nuggets shapes out of the mixture then place in the bowl.
    2 Place the bowl with the nuggets into a fridge and let firm up for about fifteen minutes. In the meantime, using a small mixing bowl, add in the egg and some sprinkles of salt to taste then beat. Place the psyllium husk in another bowl then working with one nugget at a time, dredge in the egg then the psyllium husk and set aside.
    3 Place a skillet pan over medium heat, add in olive oil then fry the nuggets for a few minutes until cooked through, serve with any low carb sauce of choice, enjoy.
