Low Carb Creamy Mushroom and Chicken

And by the powers vested in cream, I declare you mushroom and chicken!

Ingredients for 2 servings

  • 2 pastured chicken cutlets.
  • 1 small onion.
  • 5 cremini mushrooms.
  • 1/2 teaspoon of pink salt.
  • 1/2 teaspoon of dried thyme.
  • 3 tablespoons of unsalted butter.
  • 1/3 cup/75g of full-fat canned coconut milk.

Instructions

1 Place a non-stick skillet pan over medium heat then add in about 2 tablespoons of butter. Once the butter melts, add in the mushrooms and salt to taste then sauté for a few minutes until the mushrooms become brown. Next, add in the onions and cook for about six minutes until it becomes soft, set aside. don’t forget to stir as you cook.
2 Still using the same skillet pan over medium heat, add in the rest of the butter then let it melt. Once the butter melts, season the chicken with some sprinkles of salt and thyme then add to the hot butter. Cook the chicken for about five minutes, flip over and cook for an additional five minutes.
3 Next, add in the cooked mushroom and onions alongside the coconut milk then simmer everything for about one minute, serve.
