    Delicious low carb pancakes. Because a keto breakfast does not need to be boring!

    Ingredients FOR 6 SERVINGS

    • 2 large eggs
    • 1 tablespoon of water
    • 2 oz. (60g) of cream cheese, cubed
    • 2/3 cup (48g) of almond flour
    • 1 teaspoon of baking powder
    • 2 teaspoons of vanilla extract
    • 1/2 teaspoon of cinnamon
    • 1/2 teaspoon of stevia sweetener
    • Berries for serving

    Instructions

    1 Using a food processor or a high-speed blender, add in the eggs, water, cream cheese, almond flour, baking powder, vanilla extract, cinnamon, and stevia then blend until the mixture becomes smooth. Make sure you scrape down the slides of the blender as you blend then let the batter rest for about two minutes.
    2 Place a non-stick skillet pan over medium heat, working in batches, add in the pancake batter and cook for a few minutes until it starts to bubble. Flip the pancake over and cook for a few more minutes until it becomes brown on both sides. Serve the pancakes with berries, enjoy.
