Using a small mixing bowl, add in the egg and the MCT oil then mix properly to combine. Pour the mixture into a microwave-safe bowl then microwave for about eighty seconds then slice into smaller pieces, set aside.
Using a large mixing bowl, add in the mozzarella, cream cheese, and almond meal then mix properly to combine. Pour the mixture into a microwave-safe bowl then microwave for about one minute. Take the mixture out of the microwave, stir to combine then microwave for an additional thirty seconds.
Next, add in the xanthan, baking powder and egg then stir properly until everything combines. Place the dough between two parchment paper then use your hands to make rough rectangles. Preheat a quesadilla maker over medium heat, place a small portion of the dough on the maker then cook for about one to two minutes.
Next, add in the microwaved egg, bacon, cheese, mayo, and sliced jalapeños, top with another quesadilla then cook for about five minutes. Serve.
