    Ingredients for 3 servings

    Stuffing

    • 1 egg.
    • 15g (1.06 oz.) of MCT oil.
    • 40g (1.43 oz.) cups of cooked bacon.
    • 30g (1.06 oz.) of dairy goat feta.
    • 2 tablespoons of mayonnaise.
    • 1 tablespoon of sliced jalapeños.

    Quesadilla

    • 175g (3.53 oz.) of grated mozzarella.
    • 30g (1.06 oz.) of cream cheese.
    • 75g (2.65 oz.) of almond meal.
    • 1/2 teaspoon of xanthan gum.
    • 1/2 teaspoon of baking powder.
    • 1 egg.

    Instructions

    1 Using a small mixing bowl, add in the egg and the MCT oil then mix properly to combine. Pour the mixture into a microwave-safe bowl then microwave for about eighty seconds then slice into smaller pieces, set aside.
    2 Using a large mixing bowl, add in the mozzarella, cream cheese, and almond meal then mix properly to combine. Pour the mixture into a microwave-safe bowl then microwave for about one minute. Take the mixture out of the microwave, stir to combine then microwave for an additional thirty seconds.
    3 Next, add in the xanthan, baking powder and egg then stir properly until everything combines. Place the dough between two parchment paper then use your hands to make rough rectangles. Preheat a quesadilla maker over medium heat, place a small portion of the dough on the maker then cook for about one to two minutes.
    4 Next, add in the microwaved egg, bacon, cheese, mayo, and sliced jalapeños, top with another quesadilla then cook for about five minutes. Serve.
