    Low Carb Sausage and Cheese Casserole

    Ingredients for 9 servings

    • 1 lb. (453.59g) of sausage.
    • 6 minced cloves of garlic.
    • 12 large eggs.
    • 1/2 cup (119g) of heavy cream.
    • 2 cups (226g) of cheddar cheese.
    • 2 tablespoons of chopped fresh parsley.
    • 1/4 teaspoon of sea salt to taste.
    • 1/4 teaspoon of black pepper to taste.
    • 3 cup (273g) of broccoli.

    1 Place a skillet pan over medium-high heat, grease with cooking spray then let heat. Once the pan is hot, add in the garlic and cook for about one minute until it becomes fragrant. Add in the sausage and cook for an additional ten minutes until it becomes brown in colour. don’t forget to break the sausage apart with a spatula while cooking.
    2 Next, preheat an oven to 191 degrees C (375 degrees F), place a cooking pot over medium heat, add in water and bring to boil. Once the water boils, add in the broccoli and blanch for about five to seven minutes. Once cooked, place the broccoli into an ice bath for a few minutes, drain and dry with paper towels.
    3 Next, using a large mixing bowl, add in the eggs, heavy cream, half of the cheddar cheese, parsley, salt, and pepper to taste then mix properly to combine. Grease a casserole dish with cooking spray, add in the cooked sausage followed by the egg mixture then add the rest of the cheese on top.
    4 Place the casserole dish into the preheated oven and bake for about thirty minutes until it is cooked through, serve.
