    Ingredients for 4 servings

    • 1 oz./28g of butter.
    • 1 chopped scallion.
    • 2 chopped pickled jalapeños.
    • 1 chopped tomato.
    • 6 eggs.
    • 3 oz./84g of shredded cheese.
    • Salt and pepper to taste.

    1 Place a frying pan over medium-high heat then add in the butter. Once the butter melts, add in the scallions, jalapeños, and tomatoes then fry for about three to four minutes. In the meantime, crack the eggs into a small mixing bowl then beat. Pour the egg into the pan and scramble for about two minutes.
    2 Next, add in the cheese, salt, and pepper to taste, stir to combine then serve.
