    Salmon with Pesto Delis

    This exquisite concoction will be a sure crowd-pleaser. Easy and quick to make, this versatile dish will keep you happy and keto.

    Ingredients for 6 servings

    • 1 1/2 lbs./750g of salmon.
    • 1 cup/115g of mayonnaise or sour cream as desired.
    • 1 tablespoon of green pesto.
    • 2 1/2 oz./96g of grated parmesan cheese.
    • 1 lb./30g of fresh spinach.
    • 1 oz./28g of butter or olive oil as desired.
    • Salt and pepper to taste.

    Instructions

    1 Preheat the oven to 200 degrees Celsius, grease a baking sheet with butter or oil then set aside. Season the salmon with pepper and salt to taste then place in the greased baking sheet with its skin side down. Using a small mixing bowl, add in the mayonnaise, pesto and parmesan cheese then mix properly to combine.
    2 Spread the mayo mixture over the salmon then place the baking sheet into the preheated oven. Bake the salmon for about fifteen to twenty minutes until it is cooked through and flakes easily with a fork.
    3 In the meantime, place a skillet pan over medium heat, add in the rest of the butter then melt. Once the butter melts, add in the spinach, salt, and pepper to taste then sauté for about two minutes, serve with the salmon and enjoy.
