    Sun-dried Tomato Chicken Delis

    Add a bit of sunshine to your day with this delicious sun-dried tomato chicken.

    Ingredients for 6 servings

    • 1/4 cup (60 ml) of reserved olive oil from the sun-dried tomatoes.
    • 6 (750 g/ 1.3 lb.) skinless and boneless chicken thighs or breasts.
    • 3/4 cup (90 g/ 3.2 oz) of grated Parmesan cheese.
    • 1 teaspoon of sea salt to taste.
    • 1/2 teaspoon of black pepper to taste.
    • 1 cup (110 g/ 3.9 oz) of chopped and drained sun-dried tomatoes.
    • 4 minced cloves of garlic.
    • 1 tablespoon of Italian seasoning.
    • 1 1/2 cup of (360 ml/ 12 fl. Oz.) heavy whipping cream.

    1 Using a small mixing bowl, add in the half parmesan cheese, salt, and pepper to taste then mix to combine. Dredge the chicken in the cheese mixture, coating all sides then set aside. place a skillet pan over medium heat then add in the oil. Once the oil is hot, add in the coated chicken then sear for about four to five minutes on both sides until it becomes golden brown in colour, set aside in a plate.
    2 Still using the same skillet pan over medium heat, add in the garlic, Italian seasoning, and sun-dried tomatoes then cook for about one to two minutes. Add in the heavy cream and the rest of the cheese, stir properly to combine then add in the seared chicken.
    3 Cook the meal for about five more minutes until the chicken is properly cooked. Serve.
